Monday Weekly menu planning with blog hop...........

New week ~ So how's your meal planning going today? Have you sorted out your Dinner meals?    Just trying out colours i like . Then will do a new linky button for you all to ad on your blog so we can all be far yes! Great . lets move on.
Here is my Dinner Menu for this week:~

MONDAY ~lemon pasta with Chicken

TUESDAY ~Mongolian lamb served with steamed brown rice

WEDNESDAY ~chops , chips and Greek salad

THURSDAY~Baked salmon with cous cous  {recipe below}

FRIDAY ~Homemade hamburgers with the lot (go wild Chloe style)

SATURDAY ~Out with friends for Dinner

SUNDAY ~    Chicken Marengo  



 BAKED SALMON WITH COUS COUS



Really this recipe i love so easy no fuss baked salmon perched upon a scrumptious  pile of coconut cous cous.

WHAT YOU NEED:

 can coconut milk
1 1/2 cups dry couscous
Sea salt and freshly ground black pepper
1/4 cup chopped fresh spring onion greens and whites
3 tablespoons chopped fresh flat leaf parsley
3 tablespoons chopped fresh mint
5 tablespoons toasted pumpkin seeds
2 boneless skinless salmon filets                                                                         
Lemon or lime wedges (optional)


TO MAKE EASY:

Preheat the oven to 400 degrees F. Bring the coconut milk to a boil in a medium stockpot. Add the couscous and season with salt and pepper. Cover the pot, remove from the heat, and let stand 10 minutes. Finally, stir in the spring onion parsley, mint, and pumpkin seeds.

Meanwhile, season both sides of the salmon with  seasoning. Place the fish on a lined baking sheet, until just cooked through but still medium-rare in center, about 10 minutes. Make a bed of the couscous, place the fish on top, tear up some extra mint leaves for garnish, and serve with lemon wedges (optional).

  3. Actually I never make a plan on my dinner because I don’t have much time but after seeing your blog, I also got an interest to do that in future and defiantly I will try this salmon recipe as well.
