Pitango organic pumpkin Leek Risotto with Chicken and Greens ~ Review




INGREDIENTS:

  • 1 x 500g pouch of Pitango organic Pumpkin,Leek and Spinach Risotto
  • 2/3 Chicken breasts
  • Handful of green beans
  • juice of half a lemon
IN THE PANTRY:


  • 2 tablespoons olive oil
  • Salt and pepper (to taste)
  • 1 tablespoon ground coriander

METHOD:

Toss the chicken in ground coriander ,salt and pepper. Place into the frying pan with 2 tablespoons of olive oil, turning after 5 -6 minutes,until golden brown and cooked through.

Fill a medium pan with boiled water and salt cut the beans in half then add.

Add to the pan cover and boil. Pour risotto into a dish pop in microwave and heat for 3 minutes. stirring occasionally, until all heated through

Serve the risotto with chicken and greens

I shall be trying the chicken and garlic next week if it's anything like this one i am sure it will be just as yummy.

  1. Looks as if it did. What I said was the recipe sounds delicious and easy. Although we don't have that prepacked brand in England, it could be substituted.
